על הספר

Abstract: Food consumption patterns in the U.S. and the determinants, trends, and consequences of food selections were the topics of a 1984 symposium sponsored by the Food and Nutrition Board for scientists, practitioners, policymakers, and the public. Proceedings of the symposium presented in this volume are divided into four major content areas. The first section reviews data on eating patterns collected from two major surveys (Nationwide Food Consumption Survey, National Health and Nutrition Examination Survey) conducted by USDA and DHHS. Implications of food consumption data for the nutritional and health status of the U.S. population are also reviewed. The second section examines approaches to understanding the motivational factors that influence food selections and dietary habits, according to perspectives from the fields of psychology, economics, and consumer behavior. The third section explores the nutritional implications of selected eating trends, particularly with respect to socioeconomic groups at nutritional risk. The final section provides perspectives on the roles of policymaking organizations and the food industry in nutrition research, program planning, and nutrition education for the public. A list of program participants and co-authors, and a subject index are included.
